Summer squash or zucchini is a mellow way to introduce your baby to vegetables. The squash releases water when it purees, so it shouldn't need any additional liquid for blending. As your baby gets older and can handle more texture, you can thicken the consistency by adding cooked white potato, sweet potato, or cereal such as pureed oats.

This recipe is intended for babies 6 months and up.

Ingredients

1 medium zucchini, trimmed and sliced

Preparation

In a saucepan over medium-high heat, bring 1 inch (2.5 cm) of water to a boil. Place the zucchini in a steamer basket and set over the water, then cover the pan. Steam until the zucchini is very tender, about 5 minutes.

Turn off the heat, remove the steamer basket, and let the zucchini cool slightly. Puree in a blender or food processor until the texture is right for your baby.

Refrigerate the puree in an airtight container for up to three days, or freeze for up to three months. (Storage tip: Spoon into ice-cube trays for single servings that are easy to thaw.)

Makes about ¾ cup (6 fl oz/180 ml)
